My diet
Ok to alleviate doubts to whether My low white blood count is diet. I’m going to record what I eat starting today.
Breakfast. When I first wake up I eat fruit. This morning I had a plum. Then 4-6 Brazil nuts. 4 or 5 dried apricots. A few figs. I had a half cup of oatmeal with 2-3 tablespoons of TJs agave maple mix.
Lunch. Half- full cup of a mix of Quinoa (multicolor) and white basmati rice cooked in vegetable broth. The mix included egg plant and spices like parsley, basil and Tumeric. I used dry bc fresh doesn’t keep long and I cook just for me.
Half cup of watermelon
Snack/ supper
Rice pasta with chard, celery, spring onions cooked in olive oil and Apple cider venegar plus spices like basil tumeric and parsley. I’m staying away from spicey ones. I made enough to fill two cup containers. I ate the first cup at 2 pm and the second at 4 pm. Ok did not make it to dinner.
Dinner #2. I’m thinking of going to TJs and getting plantains and hummus. I can eat an entire container in a sitting. Truth. I’ve been known to eat an entire 12″ pizza gluten free by myself to.
Ok I ate an entire tub of hummus. And a bag of TJS kale chips and almost an entire bag of plantains. Came home and its 11 pm and I’m still hungry. Snacked on 4 Brazil nuts and a few apricots. Munchies. Need to go to bed. Tomorrow need to salute some cabbage. And I forgot I also snacked on some kimchi today with lunch. I eat. Maybe I’m not getting enough veggies but I’ve increased my carbs.
I’m soaking chickpeas for Wednesday and should try to try cooking with mung beans tomorrow maybe with some amareth.
